David Stoker has been the Head Chef at The Castell-y-Bwch Inn since February 2014. He has over 24 years experience in the catering industry and he even had the honour, in 2008, of cooking for Her Majesty The Queen.
He has also worked in a variety of establishments over his 24 year career. The most notable of these being the fine dining restaurants @Adams – near The Gower and The Mermaid Bar & Restaurant – which is also in Swansea.
David’s approach to food is based on 3 principles – he refers to them as The 3 ‘P’s. Preparation, Presentation and last but certainly not least, Pride. He believes in producing food to the best possible quality and no dish leaves the kitchen until he is satisfied.
Every meal receives absolute care and attention as he takes great pride in preparing food that people will enjoy. The food is a big part of the experience, here at The Castell, so the customers being satisfied and wanting to return is paramount for David.
The menu includes the classic favourites expected from a country pub – something David believes is very important. In addition to a classic menu with good affordable food it was important to include a wide range of choice. This is why the Curry Corner, Salad Bar and a generous Steaks & Grills section were added to the menu.
David has also introduced a homemade feel into the menu with his homemade gravy and a selection of homemade puddings.
When people visit a country pub, like the Castell-y-Bwch, they expect the classic pub meals to be available and reasonably priced. The Castell is a classic country pub and restaurant so we believe it is important for the menu to reflect this, not only with the food but also the pricing
